HAM HAWK AND BEANS

1 SMALL BONE IN HAM (I GET MINE AT WALMART) 4 CANS OF CHICKEN BROTH 4 CANS OF PINTO BEANS 1 TO 3 TABLESPOONS OF CORNSTARCH (MIX WITH THE JUICE THE HAM BOILED IN) UP TO 4 OR 5 CUPS OF WATER (WATER IS USED TILL HAM IS COMPLETELY COVERED TO BOIL) I DO NOT SALT THIS RECIPE FOR THE FACT HAM IS A VERY SALTY MEAT. 1/2 TEASPOON PEPPER 1/2 TEASPOON OF GARLIC POWDER 1/2 TEASPOON OF ONION POWDER I TAKE THE HAM AND PUT IT IN A SOUP PAN (YOU CAN USE A CROCK POT) WITH JUST THE CHICKEN BROTH THEN WATER TILL MEAT IS COVERED. BRING TO BOIL AND THEN SIMMER ON LOW FOR ABOUT 5 HOURS. (IN A CROCK POT LEAVE ON HIGH FOR ABOUT 6 or 7 HOURS). ONCE IT'S SO TENDER IT FALLS OFF THE BONE CUT IT UP INTO CHUNKS. PUT THIS INTO THE CHICKEN BROTH. ADD TWO CANS OF BEANS (JUICE OF BEANS AND ALL), THEN PUREE THE OTHER TWO CANS (WITH THE JUICE). ADD ALL BEANS INTO THE BROTH. USE THE CORNSTARCH TO THICKEN. BRING BACK TO BOIL, SIMMER FOR ABOUT 30 MINUTES (UNTIL BEANS TASTE COOKED) ON MEDIUM LOW HEAT, THEN SERVE. (I SERVE

STEAK FAJITAS

1 GOOD SIZED FLANK STEAK (I CUT MINE INTO PIECES WITH MY KITCHEN SCISSORS). 1 MEDIUM ONION CUT INTO LONG SLICES 2 MEDIUM BELL GREEN PEPPERS CUT INTO LONG SLICES 1 RED BELL PEPPER CUT INTO LONG SLICES 1 MEDIUM SERRANO PEPPER CUT IN HALF THEN INTO THIN SLICES 2 TABLESPOONS OF OLIVE OIL (ANY OIL WILL WORK) 1 TEASPOON OF PEPPER 1/2 TEASPOON OF SALT 1 TABLESPOON OF CHILI POWDER 1/2 TEASPOON OF ONION POWDER 1/2 TEASPOON OF GARLIC POWDER 1/2 TEASPOON OF SEASONED SALT 1/2 CUP SOUR CREAM (OPTIONAL) 1 CUP SHREDDED CHEESE (ANY FLAVOR OF YOUR CHOICE) 12 HEATED TORTILLAS TAKE THE VEGGIES AND MEAT (AT THE SAME TIME) SAUTE THEM IN THE OIL IN A GOOD SIZED PAN TILL FULLY COOKED. PLACE A GOOD AMOUNT (OF YOUR CHOICE) IN THE MIDDLE OF A TORTILLA ADD YOUR TOPPINGS, ROLL, AND ENJOY.

BANANA BREAD

2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup butter 3/4 cup brown sugar 2 teaspoon of cinnamon 2 teaspoons of vanilla 2 eggs, beaten 2 1/3 cups mashed overripe bananas Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

LEMON GIRL SCOUT CREME COOKIES DIPPED IN DARK CHOCOLATE 1 PACKAGE OF CREME COOKIES (YOU CAN USE OREOS, WHITE OR CHOCOLATE, OR LEMON CREME GIRL SCOUT WHICH IS WHAT I USED IN THIS PICTURE 1 1/2 PACKAGES OF CREAM CHEESE (AT ROOM TEMP) 1 TEASPOON CINNAMON (OPTIONAL) 1/8 TEASPOON OF SALT (BRINGS OUT ALL FLAVORS) 1 PACKAGE OF GOOD CHOCOLATE (CAN USE ANY CHOCOLATE, I USE ALL, DARK, WHITE, MILK AND SEMI WHEN I MAKE THESE TO PLEASE EVERYONE) 1/4 CUP OF BUTTER (SOFTENED NOT COMPLETELY MELTED) UP TO 1/4 CUP OF HEAVY CREAM OR MILK (TO MAKE CHOCOLATE CREAMIER) TAKE COOKIES AND MASH THEM IN A ZIP LOCK BAG. THEN PUT IN A FOOD PROCESSOR TO FINELY GRIND, ADD ALL CREAM CHEESE AND CINNAMON TILL SMOOTH. REFRIGERATE FOR 30 MINUTES. WHEN READY TO SCOOP UP INTO SERVINGS USE A SMALL SPOON (I USE THE SMALL ICE CREAM SCOOP) AND PLACE EACH ONE ON A PIECE OF WAX PAPER. PUT INTO FREEZER TO HARDEN FOR ABOUT AN HOUR. IN THE MEAN TIME, MELT CHOCOLATE IN MICROWAVE OR DOUBLE BOILER... ADD A TINY BIT OF BUTTER AND CRE

SUGAR COOKIE CRUST WHIPPING CREAM, PEACHES, BANANAS, BLUEBERRIES I PACKAGE STORE BOUGHT SUGAR COOKIE DOUGH (YOU CAN USE ANY CHOICE OF STORE BOUGHT COOKIE DOUGH, I PREFER SUGAR, OR YOU CAN USE HOMEMADE AS WELL) 1 PACKAGE OF FROZEN KOOL WHIP ( YOU CAN MAKE HOME MADE AS WELL) 1/4 CUP BLUEBERRIES (OPTIONAL) 1 PEACH CUT THIN INTO SMALL PIECES 1 BANANA CUT THIN ROLL OUT COOKIE DOUGH TO GET A LARGE CIRCLE (I USE MY PIZZA PAN AS MY EXAMPLE). BAKE ACCORDING TO PACKAGE. (I USUALLY COOK MINE FOR ABOUT 8 TO 10 MINUTES TILL ITS THE COLOR I PREFER). ONCE DONE LET COOL FOR ABOUT 30 MINUTES. ONCE COOLED PUT THAWED WHIPPING CREAM ON THE COOKIE LIKE YOU ARE PUTTING RED SAUCE ON A PIZZA. ONCE YOU GET THAT TO THE THICKNESS YOU DESIRE. ADD FRUIT OF YOUR CHOICE (THE ONES LISTED YOU DON'T HAVE TO USE, USE WHAT YOU LIKE. I LEFT OUT STRAWBERRIES, RASPBERRIES, KIWI, ETC.. DOESN'T MATTER. CHILL FOR ABOUT

CHEESE WHIZ HAMBURGERS

1 POUND GROUND BEEF (CAN USE GROUND TURKEY OR CHICKEN OR PORK) 1 JAR OF CHEEZE WHIZ (I USE LARGER FOR MORE OF A CHEESY FLAVOR) 1 TEASPOON SALT 1 TEASPOON PEPPER I PACKAGE OF HAMBURGER BUNS IN A MEDIUM SKILLET, COOK UP THE HAMBURGER BREAKING IT AS LITTLE AS YOU CAN (COOKING THE MEAT SLOWLY ON A LOWER HEAT TO BEGIN WITH HELPS BREAK IT DOWN FASTER I HAVE FOUND). ADD SALT AND PEPPER TO MEAT WHILE ITS COOKING FOR BETTER FLAVOR. (I DON'T DRAIN THE GREASE FROM THE MEAT IT MAKES THE CHEESE SPREAD BETTER I THINK). ONCE THE MEAT IS COMPLETELY COOKED ADD THE CHEESE. PUT ON LOW HEAT AND LET THE CHEESE GRADUALLY MELT. SERVE ON A BUN WITH CHIPS.. (I ALSO USE IT AS A DIP WITH RUFFLES POTATO CHIPS.

CHICKEN FRIED STEAKS COOKING EGGS BEFORE THEY ARE BEATEN ALL SPICES WITH FLOUR BEFORE MIXED RECIPE: 1 PACKAGE OF CUBED STEAK (I BUY THE 1 1/2 POUND PACKAGE) 2 EGGS BEATEN 1 CUP FLOUR 1 TABLESPOON GARLIC POWDER 1 TEASPOON CINNAMON 1 TEASPOON OF RED PEPPER 1 TABLESPOON SEASONED SALT 1 TABLESPOON GARLIC SALT 1 TEASPOON SALT 1 TABLESPOON PEPPER 1 TABLESPOON ONION POWDER 2 TABLE SPOONS OF OLIVE OIL (CAN USE CANOLA OIL, ALSO CAN USE MORE THEN IS CALLED FOR) FIRST YOU BEAT THE EGGS. MIX ALL THE SPICES TOGETHER WITH THE FLOUR. PUT ONE OF THE CUBED STEAK IN THE EGG MIXTURE, SHAKE IT OFF. THEN PUT INTO THE FLOUR MIXTURE (USE FINGERS TO MAKE SURE THE FLOUR COVERS THE SIDE THOROUGHLY, THEN REPEAT ON OTHER SIDE. IN THE MEAN TIME HEAT PAN TO MEDIUM HEAT (I USE MY GRIDDLE PAN AND SET THAT TEMP TO 325). RIGHT BEFORE YOU

Grilled Pizza

Step 1: make dough. Here is the recipe I used when I made the dough. Garlic pizza dough 2 cups of all purpose flour 1 table spoon baking powder 1/4 teaspoon salt 1/4 teaspoon garlic powder (optional) 2/3 cup water 1 tablespoon olive oil (I use garlic infused olive oil which I made.) Preheat the BBQ. On my gas BBQ, I kept it at low heat. Combine dry ingredients in mixing bowl. Add liquids, and stir to incorporate dry ingredients. Knead dough by hand 6-8 times on a lightly floured surface. Roll dough thinly. Put a thin brush of olive oil onto the pizza dough. (I also put tinfoil on my bbq that is also optional) place dough on the grill and cook on one side for about 5 minutes. (This will depend on your BBQ, watch for the crust to start to brown.) Bring dough back in and put your sauce and toppings as you desire.

Finished product. This was the very first castle cake I ever made and so I didn't think I would get it prefect, but the experience helped me prepare for round two coming up this week. But here are some better views of the finished cake. I made two different tops to get some ideas. You can see both ways I did it.

Step 2: Frost desired area where you want to apply fondant (I used home made but you can use store bought). Start kneading it to make it softer (at this point you may put the food coloring in it, I use gels, less mess). Once you have it the softness desired, roll out to desired thickness. you can use a pizza cutter to cut off the unneeded ends. Very carefully roll it over the frosted cake.

I'm going to start out with the castle cake I'm making for my step daughter, Makinzy, for her 6th birthday. She asked me if I would make her a castle cake and decorate it with pink decorations. Step 1: First I baked the cake in three different cake pans. (you can make the cake batter from scratch or use a box). Let cool for about an hour or refrigerate or freeze for half that time. Take the cake out of the pans they were baked in. Cut out the shape you desire and freeze. Then frost the cake in a light layer of frosting. Then I put the cake back in fridge/freezer for a bit longer to harden, I usually do this for about an hour.

Why I love to cook

I think telling you all why I love to cook and bake will help you understand why I am always cooking and baking. I have always liked to cook. I taught myself how to cook and to be creative on my recipes. I am not a person at all that likes to eat fast food. I prefer to eat home made stuff. I decided to make a cookbook because EVERYONE around me kept asking me what the recipe was to the dish I had just fed them. What I want to do for my blog is post my recipes with pictures, as an online cookbook for my family and friends.
